Similar to whole barley, cracked barley is a whole grain and a great addition to any dish. Use it to bulk up a favorite soup, add substance to a casserole, bring depth to a salad, or increase the heartiness of bread loaves, rolls, and muffins.
To cook, add 2 cups water to 1 cup dry cracked barley. Cover and bring to a boil, then lower the heat and simmer for 20 to 30 minutes. Let sit five minutes.
