1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups sugar
2 3/4 cups barley flour
2/3 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
2 Tbsp. sugar
2 tsp. cinnamon
6 dozen cookies
NOTE: These cookies must be mixed by hand to achieve that perfectly soft, puffy cookie at the end, so forgo the electric mixer for this recipe.
1. Heat oven to 400 degrees F. Cream butter, 1 1/2 cups sugar, and eggs together.
2. Blend in flour, cream of tartar, soda, and salt.
3. Shape dough by rounded teaspoonfuls into balls.
4. Mix 2 Tbsp. sugar and the cinnamon. Roll balls in mixture. Place 2 inches apart on ungreased baking sheet. Bake 8 to 10 minutes or until set. Immediately remove from baking sheet.
